Ending August the right "light" way, enjoy. (Re-posted for the 2024 holiday season)

Finnish Pancakes Ingredients: 1 1/2 cups all-purpose flour 1 1/2 cups milk 1/4 cup heavy cream 2 extra large eggs 3 tbsp. melted butter 3 tbsp. liquid honey 1/2 tsp. salt 1/2 tsp. cinnamon Extra butter (or margarine, also if preferred for cooking) Directions: Combine all the ingredients in a large bowl or mixer and whisk until smooth. Cover and refrigerate butter  (or margarine) for 30 minutes up to overnight; whisk batter again just before use. Heat a large non stick  pan to medium heat. Melt butter or margarine in the pan and pour in enough batter to cover the bottom of the pan. Cook pancakes until small bubbles pop or until the underside is golden when lifted. Flip the  pancakes over and cook the other side also until golden. Remove from pan and keep warm until served.  Serve with favourite toppings; fruit, cream, preserves or syrup, and serve pancakes either flat or rolled.

Carrot Pecan Cake Ingredients: 1 1/2 cups canola oil 2 1/4 cups white sugar (granulated) 4 egg yolks 5 tbsp. hot water 2 1/2 cups sifted all-purpose flour 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1 tsp. each of nutmeg, cinnamon and ground cloves 1 1/2 cups grated raw carrots 1 cup chopped pecans 4 egg whites Directions: Early in the day, grease and flour 3 glass loaf pans, and set aside. Cream oil and sugar until very well  mixed. Beat in egg yolks, one at a time, and beat well after each addition. Beat in hot water. Into  batter, stir 1 1/2 cups of the grated raw carrots. Beat egg whites until soft peaks form. Fold into batter.  Turn and place batter into prepared pans. Bake in preheated kitchen oven/stove at 325 degrees F. for 55  to 60 minutes, or until toothpick in the centre of each loaf comes out clean. To end this week, two more original family favourites.

Cheese Cake Ingredients: 3/4 cup graham cracker crumbs 1/3 cup brown sugar Grated peel of one lemon 1/4 tsp. ground cardamom 1/3 cup melted butter (or margarine) 4 pkgs. (250 g. each) cream cheese (at room temperature) 4 eggs 3/4 cup granulated white sugar Juice of 1/2 a lemon 1 tsp. pure vanilla extract Directions: In medium bowl, mix together graham cracker crumbs, brown sugar, lemon peel, cardamom and butter  (or margarine, if preferred). Pat firmly and evenly onto bottom of 10 inch spongiform pan. In large  bowl, combine cream cheese, eggs, white sugar, lemon juice and vanilla; beat until smooth. Pour cream  cheese mixture over crust in spongiform pan. Bake in preheated oven at 350 degrees F. for 35  minutes. Turn off heat, and prop open oven door with folded tea towel. Let cake stand for about one  hour. Refrigerate several hours before serving. Makes 10 to 12 servings in all. If so desired, experiment  with this recipe; for instance, use 5 eggs and 1 ...

Secondly today, another all-time family favourite, with some twists.

Carrot Cake This classic recipe uses special ingredients as follows, enjoy. Ingredients: 1 cup all-purpose flour 1/4 cup quick cooking (cooked) rolled oats 1 1/2 tsp. baking powder 1 tsp. each of baking soda and ground cinnamon 3/4 cup raisins (or chopped dates) 1 beaten egg 1 can Carnation Sweetened Condensed Skim Milk (use preferred amount) 1 1/2 cups grated carrot 1/2 cup crushed drained pineapple 2 tbsp. vegetable/cooking oil (canola preferred) 2 tsp. grated orange rind Directions: Preparation time; 10 minutes, baking time; 65 to 70 minutes. In large bowl, combine all dry ingredients  and raisins. In medium bowl, combine remaining ingredients. Stir condensed milk mixture into flour  mixture until just moistened. Pour into greased 9 by 5 inch loaf pan. Bake in preheated oven at 350  degrees F. for 35 minutes. Cover loosely with aluminum foil, with the shiny side up to prevent over- browning/burning, continue baking for another 30 to 35 minutes, or until the inserted to...

Zucchini Bread Firstly, just a friendly reminder to all of my readers and supporters of this blog, all of the dishes posted  here are also low in fat, still a very important factor in today's baking and cooking of the 21st century. Ingredients: 1 tbsp. lemon zest 1 cup whole spelt flour 1 cup all-purpose flour 2/3 cup white sugar 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/4 tsp. nutmeg 1 cup grated zucchini (tightly packed) 1/4 cup unsweetened applesauce 1 lightly beaten egg 1 egg white 1 tsp. vanilla extract 1/4 cup plain, non-fat, drained yogurt Directions: Bake in preheated oven at 350 degrees F. Coat a 9 by 5 inch loaf pan with non-stick cooking spray.  Gently spoon flour into measuring cups (do not pack). Add flour to a large bowl, followed by the  sugar, baking powder, baking soda, salt and nutmeg. Stir well with a wire whisk. In another bowl,  combine the zucchini, applesauce, beaten egg, egg white, vanilla, lemon zest and yogurt. Add zucchi...

Secondly today, something easy but different; enjoy as always.

Zucchini Bread Ingredients: 3 eggs 1 cup cooking oil (canola) 1 cup brown sugar (demarara) 2 cups grated zucchini 2 1/2 cups flour 1/2 cup wheat germ 3 tsp. cinnamon 1 tsp. vanilla extract 1 tsp. salt 1 tsp. baking powder 1 tsp. baking soda 1 cup chopped walnuts 4 (rounded) tbsp. cocoa Directions: Beat eggs, then add sugar, oil, zucchini and vanilla. Add dry ingredients, then mix in walnuts and  cocoa. Bake in preheated kitchen oven at 325 degrees F. for 1 hour. Let cool, then invert loaf pan and  cool completely. Finally, savour this unique dish as a dessert or snack with your favourite beverage.

Peach Shortcake Muffins Dated April 2000 with good results. Muffin Ingredients: 1 2/3 cups Robin Hood All-Purpose Flour 1/2 cup granulated white sugar 2 1/2 tsp. Magic Baking Powder 1/4 tsp. salt 1/2 tsp. ginger 6 tbsp. margarine 1 cup milk 1 2/3 cups canned sliced peaches (Del Monte or other favourite) Topping Ingredients: 2 tbsp. granulated white sugar 1/2 tsp. cinnamon Directions: Combine first 5 ingredients in large bowl. Cut in margarine with 2 knives until mixture is crumbly. Add  milk and peaches (tip--replace peaches with fresh strawberries, if so desired), stirring only until  blended. Spoon into greased muffin cups. Sprinkle with topping mixture. Bake in preheated oven at  400 degrees F. for 20 to 25 minutes, or until set and golden. Please note too that if you wish, serve this  dish as a cold snack, or warm with whipped cream as a dessert, whatever your preference is. Freezing  the muffins is an excellent idea too. Secondly to start this week, yet another easy light classic. :-)

Fry's Cocoa Fudgy Brownies Ingredients: 1 1/3 cups all-purpose flour 1 tsp. baking powder 1/2 tsp. salt 1 cup butter (or margarine) 1 cup Fry's Cocoa 2 cups white sugar 4 eggs 1 1/2 tsp. vanilla extract 1/2 tsp. almond extract 1 cup chopped nuts (use walnuts if preferred) Directions: Stir together flour, baking powder and salt in small bowl. Melt butter (or margarine) in a large  saucepan. Remove from heat. Stir in cocoa. Blend in sugar, eggs and extracts. Then, blend in dry   ingredients and chosen nuts. Pour batter into greased 13 by 9 by 2 inch rectangular baking pan. Bake in  preheated oven at 350 degrees F. for 30 to 35 minutes, then let cool. Cut into squares, chill and enjoy as  a simple dessert or snack with your favourite beverage. Originally made in May of 2012, they are  absolutely delicious, I guarantee it.    

Keeping it light and simple during these "dog days" of summer, firstly today;

Apple-Oatmeal Crisp Ingredients: 3 cups sliced apples 1 cup white sugar 1 tsp. salt 1/4 cup water 2 cups brown sugar 2 cups oatmeal 1 1/2 cups flour 1 tsp. cinnamon 3/4 cups shortening Directions: Place the apples in an 8 by 11 inch pan. Cover with granulated white sugar, 1/4 tsp. salt and water. Mix  together the brown sugar, oatmeal, flour, remaining salt, cinnamon and shortening in a bowl until well  blended, and pour the mixture onto the top of the apple mixture. Bake in preheated oven at 350 degrees  F. for approx. 40 minutes, or until the apples are tender. Serve with your favourite flavour of ice  cream, and enjoy this wonderful dessert after your favourite meal, preferably dinner/supper, or even  serve it as a snack if so desired.

Honey Oatmeal Cookies The ability of honey to retain water keeps these cookies moist. Freshly ground out flour makes them  especially good for anyone with a wheat allergy. Ingredients: 4 cups rolled oats 1 tsp. baking powder 1 tsp. cinnamon Pinch of salt 3/4 cups softened unsalted butter 1/2 cup liquid honey 1 egg 1 tsp. vanilla extract 1/2 cups raisins (or chocolate chips) (both optional) 36 pecan halves (also optional) Directions: In food processor (or blender), process 2 cups of the rolled oats until in fine flour. Add baking powder,  cinnamon and salt; process to combine. In a bowl, blend together butter, honey, egg and vanilla; stir  in oat flour mixture, remaining rolled oats and raisins (if using). Drop heaping teaspoonfuls at a time,  about 1 inch apart onto baking sheet. Flatten to 1/4 inch thickness and decorate with pecan halves (if  using). Bake in preheated 375 degrees F. oven until lightly browned at edges, about 20 minutes. Let  cool slightly...

Rice Krispies Squares Ingredients: 1/4 cup butter (or margarine) 5 cups miniature or 40 regular marshmallows 1/2 tsp. vanilla extract (optional) 6 cups Kellogg's Rice Krispies Original Cereal (Vanilla or Brown Rice Gluten Free brands, if so desired) Directions (for oven and microwave): Firstly, for your kitchen oven; Melt butter (or margarine) in large saucepan over low heat. Add marshmallows, then stir until melted  and well blended. Remove from heat. Stir in vanilla, then add preferred cereal brand, and stir until  mixture is fully coated. Using lightly buttered spatula, press into buttered 3 1/2 L (or 13 by 9 inch) pan.  Let cool, and cut into desired number of squares. Makes 24 (5 cm. or 2 in.) squares. Per serving: 1  square = 75 calories (310 kJ), and only 1 1/2 grams of fat. Secondly for today, another classic cookie with a twist. :-)

Chocolate Chip Cookies Ingredients: **2 cups oatmeal** 3/4 cups white and brown sugar 1 cup shortening 2 eggs 1 tsp. baking soda 1/4 cup hot water 1 1/2 cups flour 1/2 tsp. salt 1 tsp. vanilla (or increase to 1 tbsp. to add extra flavour) 1 8 oz. package chocolate chips 1 cup chopped walnuts (optional) Directions: Mix sugars and shortening together, add eggs 1 at a time and continue beating until well mixed.  Combine baking soda and hot water, and add with half the flour to sugar mixture. Mix in remaining  ingredients. Drop by spoonful onto cookie sheet. Bake at 375 degrees F. for 6 to 10 minutes. Let sit and  cool, enjoy this traditional snack or dessert with milk or your favourite beverage.  

Two more anytime sweet treats, firstly.....

Chocolate Hermits A cookie of "old" using an additional special something; "strong coffee". Ingredients: 1/2 cup shortening 1 cup brown sugar 1 egg 1 1/2 cups + 1 tbsp. flour 1/4 cup cocoa 1/2 tsp. each of salt, nutmeg and cinnamon **1/4 cup cold strong coffee** Chocolate chips (use preferred amount) 1/4 to 1/2 cup chopped walnuts Directions: Combine first 3 ingredients listed above, sift dry ingredients and add to first mixture, alternately with  the coffee. Stir in 3/4 cup chocolate chips and the chopped walnuts. Bake at approx. 325 degrees F.  for 15 to 20 minutes, or until set; or firm to slight touch. Remove from oven and cool completely on  wire rack. Enjoy as a snack or dessert with your favourite beverage.

Peanut Butter Cookies Ingredients: 1/2 cup margarine 1/2 cup packed brown sugar 1/2 cup white sugar 1 unbeaten egg 1/2 cup peanut butter 1 tbsp. water 3/4 tsp. vanilla Directions: Sift 1 cup of flour, 1/2 tsp. baking soda and 1/4 tsp. salt. Beat sifted ingredients with a rotary or  electric mixer. Add dry, sifted ingredients to creamed, mixed ingredients. (the previous step is  optional) Chill dough 2 hours. Form round balls. Place on desired cookie sheets. Press with fork dipped  in flour. Bake at 325 degrees F. in your preheated oven for 12 to 15 minutes. Makes a perfect snack,   again with a glass of milk or your favourite beverage; something light and simple, even for a nice  summer day. 

A new twist on two more classic dishes, enjoy, firstly today.....

Granola Ingredients: 8 cups rolled oats 1 1/2 cups wheat germ 1 1/2 cups oat bran 1 cup sunflower seeds 1 cup each of finely chopped almonds, pecans and walnuts 1 1/2 tsps. salt 1/2 cup brown sugar (demarara) 1/4 cup maple syrup 3/4 cup honey 1 cup vegetable oil 1 tbsp. ground cinnamon 1 tbsp. vanilla extract 2 cups raisins (or sweetened dried cranberries) Directions: Preheat oven to 325 degrees F. Line 2 large baking sheets with parchment paper or aluminum foil.  Combine the oats, wheat germ, oat bran, sunflower seeds, almonds, pecans and walnuts in a large  bowl. Stir together the salt, brown sugar, maple syrup, honey, oil, cinnamon and vanilla in a saucepan.  Bring salt and other related ingredients to a boil over medium heat. Pour boiled ingredients over dry  ingredients, and stir to coat. Spread the mixture out evenly on the baking sheets. Bake in the preheated  oven until crispy and toasted, this should take about 20 minutes. Stir once halfway through. Let...

For those of you like me who like chicken dinners/suppers, my late mother had an awesome recipe for chicken breasts with Ritz Cheddar Cheese Crackers, but I can't find it anymore. Please look it up on  your favourite food-related sites and other blogs, you'll love this classic dish too, until next time.  

A new twist on another classic, perfect for breakfast or Sunday brunch.

French Toast Ingredients: 4 eggs 1/2 cup milk 1 tbsp. pure maple syrup 2 tsp. vanilla (extract) 1/4 tsp. cinnamon 8 slices challah egg bread (or brioche), (or use bread of choice) cut 1 inch thick 1/2 cup very finely chopped pecans 2 tbsp. divided butter (sticks, etc., own choice) Garnishes: As preferred; Maple syrup Whipped cream Fresh berries Pecans Directions:   Place bread into small, light dish with mixture of liquid ingredients until mixture has been fully  absorbed by the bread. In a separate shallow dish, spread chopped pecans. Dredge bread one slice at a  time into pecans, to make a thin, even coating. Repeat with remaining pieces of bread. Melt 2 tsp. of  the butter in a large skillet over medium heat. Arrange 2 pieces of bread in a single layer in the skillet,  and cook until well browned on both sides, about 5 minutes for each side. Transfer to a plate and keep  in a 200 degrees F. oven. Repeat with remaining butter and bread. Serve immediately ...

An Italian classic, enjoy the rest of summer too.

Spaghetti and Meatballs Ingredients: 3/4 to 1 lb. beef (or veal and pork) Adjust ingredients listed below as desired/preferred, this is perhaps a new spin on an oldie but goodie. Sweet basil Parsley Chopped celery 2 tsp. grated parmesan cheese Salt and pepper Speck of oregano 1 egg Garlic clove (minced from jar or clove chopped very fine) 1/4 qo 1/2 cup bread crumbs (or wet bread) Sauce: Simmer 2 to 3 hours. 2 cans tomatoes 1 can Hunt's tomato sauce 1 small can tomato paste Chopped onion Celery stalk  1/2 tsp. allspice Note: The sauce can be prepared in a blender. Use 1/2 lb. of spaghetti as directed, and lastly, thanks Mom. 

Another classic family favourite, enjoy at mid-summer preferably.

Swedish Strawberry Cake Firstly, this dish has a 1 hour and 50 minute total baking time with a 45 minute preparation time. This  recipe is also of medium difficulty according to my source. I will also post the required utensils for this  culinary creation; as follows, a springform tin (preferably measured at 24 inches in diameter), flour  sifter, pot and piping bag. Makes 10 pieces/servings in total.  Ingredients: 1/2 tbsp. butter 1 1/2 tbsp. bread crumbs 60 grams wheat flour 60 grams potato starch (very specific) 1 tsp. baking powder 4 medium sized eggs 60 grams icing sugar 600 ml. whipped cream 100 ml. milk 2 tsp. corn flour (or starch) 2 tsp. vanilla sugar 500 grams fresh strawberries Strawberry jam (use preferred amount) For those that still use the imperial measurement system rather than metric, I wouldn't deviate too far  from the details that I provided above, I hope this tip helps, thanks.
