Peach Shortcake Muffins
Dated April 2000 with good results.
Muffin Ingredients:
1 2/3 cups Robin Hood All-Purpose Flour
1/2 cup granulated white sugar
2 1/2 tsp. Magic Baking Powder
1/4 tsp. salt
1/2 tsp. ginger
6 tbsp. margarine
1 cup milk
1 2/3 cups canned sliced peaches (Del Monte or other favourite)
Topping Ingredients:
2 tbsp. granulated white sugar
1/2 tsp. cinnamon
Directions:
Combine first 5 ingredients in large bowl. Cut in margarine with 2 knives until mixture is crumbly. Add
milk and peaches (tip--replace peaches with fresh strawberries, if so desired), stirring only until
blended. Spoon into greased muffin cups. Sprinkle with topping mixture. Bake in preheated oven at
400 degrees F. for 20 to 25 minutes, or until set and golden. Please note too that if you wish, serve this
dish as a cold snack, or warm with whipped cream as a dessert, whatever your preference is. Freezing
the muffins is an excellent idea too. Finally, enjoy this very tasty treat.
