Ending August the right "light" way, enjoy. (Re-posted for the 2024 holiday season)
Finnish Pancakes
Ingredients:
1 1/2 cups all-purpose flour
1 1/2 cups milk
1/4 cup heavy cream
2 extra large eggs
3 tbsp. melted butter
3 tbsp. liquid honey
1/2 tsp. salt
1/2 tsp. cinnamon
Extra butter (or margarine, also if preferred for cooking)
Directions:
Combine all the ingredients in a large bowl or mixer and whisk until smooth. Cover and refrigerate butter
(or margarine) for 30 minutes up to overnight; whisk batter again just before use. Heat a large non stick
pan to medium heat. Melt butter or margarine in the pan and pour in enough batter to cover the bottom of
the pan. Cook pancakes until small bubbles pop or until the underside is golden when lifted. Flip the
pancakes over and cook the other side also until golden. Remove from pan and keep warm until served.
Serve with favourite toppings; fruit, cream, preserves or syrup, and serve pancakes either flat or rolled.
