A classic treat for all families, still with a twist, enjoy. :-)
Rice Krispies Squares
Ingredients:
1/4 cup butter (or margarine)
5 cups miniature or 40 regular marshmallows
1/2 tsp. vanilla extract (optional)
6 cups Kellogg's Rice Krispies Original Cereal (Vanilla or Brown Rice Gluten Free brands, if so desired)
Directions (for oven and microwave):
Firstly, for your kitchen oven;
Melt butter (or margarine) in large saucepan over low heat. Add marshmallows, then stir until melted
and well blended. Remove from heat. Stir in vanilla, then add preferred cereal brand, and stir until
mixture is fully coated. Using lightly buttered spatula, press into buttered 3 1/2 L (or 13 by 9 inch) pan.
Let cool, and cut into desired number of squares. Makes 24 (5 cm. or 2 in.) squares. Per serving: 1
square = 75 calories (310 kJ), and only 1 1/2 grams of fat. For chewier squares, use an additional 250
ml (1 cup) regular/mini marshmallows (approx. 8 large marshmallows)
Secondly, for your microwave;
In large microwaveable bowl, microwave butter (or margarine) on high power (100%) for 30 to 60
seconds. Add preferred number of marshmallows, and toss mixture to coat all ingredients. Microwave
again on high for 1 to 1 1/2 minutes, or until smooth when stirred. Conclude stirring of coated mixture
after 45 seconds. Follow steps 2 and 3 above, similiar to regular oven recipe. *Also
important*, above given baking/cooking times are for 700 watt microwave ovens, increase times by 15
to 30 seconds for lower wattage ovens.
