Zucchini Bread

Ingredients:

3 eggs

1 cup cooking oil (canola)

1 cup brown sugar (demarara)

2 cups grated zucchini

2 1/2 cups flour

1/2 cup wheat germ

3 tsp. cinnamon

1 tsp. vanilla extract

1 tsp. salt

1 tsp. baking powder

1 tsp. baking soda

1 cup chopped walnuts

4 (rounded) tbsp. cocoa

Directions:

Beat eggs, then add sugar, oil, zucchini and vanilla. Add dry ingredients, then mix in walnuts and 

cocoa. Bake in preheated kitchen oven at 325 degrees F. for 1 hour. Let cool, then invert loaf pan and 

cool completely. Finally, savour this unique dish as a dessert or snack with your favourite beverage.
