To end this week, two more original family favourites.

Cheese Cake

Ingredients:

3/4 cup graham cracker crumbs

1/3 cup brown sugar

Grated peel of one lemon

1/4 tsp. ground cardamom

1/3 cup melted butter (or margarine)

4 pkgs. (250 g. each) cream cheese (at room temperature)

4 eggs

3/4 cup granulated white sugar

Juice of 1/2 a lemon

1 tsp. pure vanilla extract

Directions:

In medium bowl, mix together graham cracker crumbs, brown sugar, lemon peel, cardamom and butter 

(or margarine, if preferred). Pat firmly and evenly onto bottom of 10 inch spongiform pan. In large 

bowl, combine cream cheese, eggs, white sugar, lemon juice and vanilla; beat until smooth. Pour cream 

cheese mixture over crust in spongiform pan. Bake in preheated oven at 350 degrees F. for 35 

minutes. Turn off heat, and prop open oven door with folded tea towel. Let cake stand for about one 

hour. Refrigerate several hours before serving. Makes 10 to 12 servings in all. If so desired, experiment 

with this recipe; for instance, use 5 eggs and 1 1/4 cups of graham cracker crumbs, enjoy.
