Pumpkin Pie Ingredients: 1 egg 1 can E.D. Smith pumpkin pie filling 1/3 cup Carnation evaporated milk 1 9 inch unbaked, homemade or frozen pie shell ***Please make certain to refrigerate and/or freeze all ingredients and utensils prior to beginning.*** Directions: Beat egg lightly in medium bowl. Add filling and milk to the mixture. Blend/Stir everything together. Pour filling into chosen preferred shell. Bake at 425 degrees F. for 15 minutes in proper sized pan. Reduce oven temperature to 375 degrees F. after time expires. Continue baking for another 35 to 45 minutes, or until knife inserted into center comes out clean. Let cool off completely for 3 to 5 minutes, and place in refrigerator or freezer, as desired/preferred. ***The prep time should be about 35 minutes in total, and the baking time will be about 1 hour.*** Finally, this delicious, rich snack/dessert serves 7 or 8 people, and please enjoy with your favourite beverage and/or desired topping (e.g. ice cream, whipped cre...

Toffee Cheesecake Squares Ingredients: 2 1/4 cups graham wafer crumbs 1/3 cup melted butter (or margarine) 1/4 cup corn syrup 2 packages (250 g. each) regular (or light) softened cream cheese 3/4 cups packed brown sugar 1/3 cup cornstarch 2 eggs 1 cup milk 2 tsp. vanilla extract 3/4 cups divided toffee bits Directions: Preheat oven to 325 degrees F. Line a 13 by 9 inch metal baking pan with aluminum foil, leaving 2 inches overhang at each end. In a small bowl, combine crumbs, butter (or margarine) and corn syrup until well blended; press into prepared pan. Bake for approx. 10 minutes, or until puffed, and set aside. Meanwhile, in a large bowl using an electric mixer, beat cream cheese and brown sugar until smooth; beat in cornstarch until well blended. Using a rubber spatula, fold in 1/2 cup of the toffee bits. Crunchy Nut Date Squares This flavour flashback will hopefully bring back memories of your childhood, and the after-school snacks your mom made. Prep time is 40 minutes, baking time is 30 minutes, and this recipe makes 50 squares, freezing is an excellent choice. Filling Ingredients: 1 lb. pitted, chopped dates (approx. 3 cups) 1 cup BeeHive or Crown Golden corn syrup (where available for purchase) 1/2 cup water 1/4 cup packed dark (demarara) brown sugar 1/4 cup lemon juice 1 cup chopped and/or toasted almonds, pecans or walnuts Base & Topping Ingredients: 1 cup softened butter (or margarine) 1 1/2 cups brown sugar 2 cups Robin Hood flour 2 cups Robin Hood oats 1/2 tsp. each of baking soda and salt Directions: Preheat oven to 350 degrees F. Lightly grease and line a 9 by 13 inch baking tray with parchment paper, overlapping 2 sides for easy removal. Mexican Rice Note: The prep time is only 15 minutes, and this culinary creation makes 5 delicious servings. Ingredients: 1 1/2 cups rice (use preferred brand) 1/2 lb. extra lean ground beef 1/2 cup red and green bell peppers (frozen, diced and/or strips) 1 cup salsa, at preferred heat and taste level 1 cup frozen and thawed corn kernels 1 cup water 1 tsp. chili powder 3/4 cups shredded cheddar cheese Directions: Brown beef in a non-stick skillet and drain out excess fat. Stir in bell peppers and saute for 2 minutes. Stir in salsa, corn, water, rice and chili powder. Bring mixture to a full boil, cover, then remove from heat and set aside for 5 to 7 minutes, or until the liquid is fully absorbed. Lastly, stir gently, then sprinkle the cheese over the surface, re-cover and set aside for an additional 2 minutes to melt the cheese. Enjoy this flavourful and tasty dish with your favourite beverage.

Matrimonial Squares Ingredients C rumb Layer: 1 1/4 cups all-purpose flour 1 1/2 cups rolled oats 1 cup brown sugar 1 tsp. baking soda 1/2 tsp. salt 1 cup butter (or margarine, if preferred) Filling: 1/2 lb. cut up dates 1/2 cup white granulated sugar 2/3 cups each of water and lemon juice/zest Directions: For crumb layer, measure all ingredients and put into large bowl. Add butter or margarine with the other ingredients until mixture becomes crumbly. Press a large half, or almost 2/3 of mixture into a greased 9 by 9 inch square pan or glass dish. For filling, combine dates, sugar, water and lemon juice/zest in a big saucepan. Bring to a full boil, and allow to simmer until mushy. If mixture is still too dry, add more lemon and water accordingly. Spread filling over bottom layer of crumbs. Sprinkle any remaining crumbs over the top. Sweet and Sour Chicken This fine recipe makes 4 servings. The prep time is only 5 minutes, and it'll be ready in 25 minutes. Ingredients: 1 tbsp. canola oil (or preferred cooking oil) 1 lb. boneless, skinless chicken breasts cut into bite-size pieces 2 cups frozen stir-fry veggies 1 cup pineapple chunks in juice undrained 1/2 cup sweet and sour sauce 1 cup water 2 cups Minute Rice Whole Grain Brown Rice uncooked (or favourite rice brand) Directions: Heat oil in large skillet on medium-high heat. Add chicken; cook and stir for 4 minutes or until cooked through. Add veggies, pineapple and sweet/sour sauce, mix well. Stir in water. Bring to a full boil. Stir in rice and cover. Reduce heat to medium-low and let simmer 5 minutes. Remove from heat. Let stand for 5 minutes, or until almost all the liquid is absorbed, and the rice is tender. This is a fine oriental dish.

Ingredients: Filling: 3 lbs. firm tart apples (use your preferred choice) 3 tbsp. unsalted butter (or margarine, if preferred) 1 tbsp. lemon juice 2/3 cups sugar 1 tsp. ground cinnamon Egg Wash: 1 egg, well beaten, with a pinch of salt 1 tsp. sugar, for finishing the pie's top (optional) Directions: Prepare and chill the dough accordingly. To make the filling, peel halve and de-core apples. Cut each half into 5 or 6 wedges. Melt butter in a wide shallow pan over medium heat. Once butter sizzles, add sliced apples and cook, tossing or stirring gently, until apples begin sizzling, for about 1 minute, or as long as required. Add lemon juice and sugar, then continue to stir gently until apples are tender; but still fairly firm, for about 5 minutes, or as long as required. If apples exude a lot of juice, they should reabsorb it as they cool off. Pour filling into a bowl or pan, where apples should fit in a single layer. Sprinkle with cinnamon, and allow to cool. Please note to begin, this classic recipe from September 2002 comes in two parts; firstly, Flaky Pie Dough Ingredients: 2 1/2 cups all-purpose flour 1/2 tsp. salt 1/4 tsp. baking powder 2 sticks cold, unsalted butter (or margarine, if preferred) 4 to 6 tbsp. cold water Directions: Combine the flour, salt and baking powder in a medium sized bowl and stir well. Cut butter into 1 tbsp. pieces, then add dry ingredients to same mixture. Toss once or twice to coat pieces of butter. Then, using your hands, or a blender/mixer, break butter into even smaller pieces, pinch and squeeze into dry ingredients, until mixture resembles coarse, ground cornmeal, and no large pieces of butter remain visible. Sprinkle a small amount of water over the mixture, then stir gently with a fork, the dough should now begin holding together. If mixture still appears crumbly and dry, add remaining water, 1 tbsp. at a time, until dough holds together easily. Turn dough out onto a lightly...

Hamburger Soup Ingredients: 1 lb. ground beef 1 cup each chopped onion and celery 1 can undiluted consomme soup 1 can chopped tomatoes 4 cups water 2 diced carrots 2 diced potatoes 1/3 cup pot barley (use preferred brand) 1 tsp. salt 1/4 tsp. ground black pepper 1/2 tsp. paprika Directions: Brown ground beef in a large soup pot or Dutch oven. Add celery, onion and saute over medium-low heat until soft. Drain off excess fat. Add all remaining ingredients, then cover and simmer for 90 minutes, or until the barley is tender. Makes 6 to 8 hot servings, and as always, enjoy the world of food.

Onion Souped-Up Meat Loaf Ingredients: 2 lbs. lean ground beef 1 packet onion soup mix 2 eggs 1/3 cup ketchup 1 1/2 cups soft bread crumbs 3/4 cups water Directions: Combine above ingredients. Shape into round, oval loaf. Place in loaf pan of preferred size. Bake at 375 degrees F. for 45 minutes maximum. Serve with favourite side dish and beverage, delicious indeed.

Pork Chops Supreme Ingredients: 6 pork chops Salt and pepper (use desired amounts) 1/4 cup cooking oil (canola) 6 thin slices of onion 6 thin slices of lemon Brown sugar 1/2 cup ketchup Directions: Salt and pepper chops as desired. Brown in pan, and add a small amount of water. Top each chop with onion and lemon, then sprinkle with sugar. Add ketchip. Cover and cook for 30 minutes minimum. Enjoy with favourite side dish; potatoes, salad, french fries, rice, etc.
