Please note to begin, this classic recipe from September 2002 comes in two parts; firstly,
Flaky Pie Dough
Ingredients:
2 1/2 cups all-purpose flour
1/2 tsp. salt
1/4 tsp. baking powder
2 sticks cold, unsalted butter (or margarine, if preferred)
4 to 6 tbsp. cold water
Directions:
Combine the flour, salt and baking powder in a medium sized bowl and stir well. Cut butter into 1 tbsp.
pieces, then add dry ingredients to same mixture. Toss once or twice to coat pieces of butter. Then, using
your hands, or a blender/mixer, break butter into even smaller pieces, pinch and squeeze into dry
ingredients, until mixture resembles coarse, ground cornmeal, and no large pieces of butter remain
visible. Sprinkle a small amount of water over the mixture, then stir gently with a fork, the dough should
now begin holding together. If mixture still appears crumbly and dry, add remaining water, 1 tbsp. at a
time, until dough holds together easily. Turn dough out onto a lightly, floured surface and form it into two
circles. Refrigerate dough until it's firm, for about 60 minutes, or as long as required. Move on to the next
step, which is the pie itself, to be continued.....
