A classic fast and hot dinner/supper, enjoy, until next week.
Mexican Rice
Note:
The prep time is only 15 minutes, and this culinary creation makes 5 delicious servings.
Ingredients:
1 1/2 cups rice (use preferred brand)
1/2 lb. extra lean ground beef
1/2 cup red and green bell peppers (frozen, diced and/or strips)
1 cup salsa, at preferred heat and taste level
1 cup frozen and thawed corn kernels
1 cup water
1 tsp. chili powder
3/4 cups shredded cheddar cheese
Directions:
Brown beef in a non-stick skillet and drain out excess fat. Stir in bell peppers and saute for 2 minutes.
Stir in salsa, corn, water, rice and chili powder. Bring mixture to a full boil, cover, then remove from
heat and set aside for 5 to 7 minutes, or until the liquid is fully absorbed. Lastly, stir gently, then
sprinkle the cheese over the surface, re-cover and set aside for an additional 2 minutes to melt the
cheese. Enjoy this flavourful and tasty dish with your favourite beverage.
