An easy and quick dinner/supper, enjoy, until Thursday or next week.

Sweet and Sour Chicken

This fine recipe makes 4 servings. The prep time is only 5 minutes, and it'll be ready in 25 minutes.

Ingredients:

1 tbsp. canola oil (or preferred cooking oil)

1 lb. boneless, skinless chicken breasts cut into bite-size pieces

2 cups frozen stir-fry veggies

1 cup pineapple chunks in juice undrained

1/2 cup sweet and sour sauce

1 cup water

2 cups Minute Rice Whole Grain Brown Rice uncooked (or favourite rice brand)

Directions:

Heat oil in large skillet on medium-high heat. Add chicken; cook and stir for 4 minutes or until cooked

through. Add veggies, pineapple and sweet/sour sauce, mix well. Stir in water. Bring to a full boil. Stir

in rice and cover. Reduce heat to medium-low and let simmer 5 minutes. Remove from heat. Let stand

for 5 minutes, or until almost all the liquid is absorbed, and the rice is tender. This is a fine oriental dish.
