Another family favourite, also light and simple.

Sour Cream Cucumber Salad Ingredients: 4 medium sized cucumbers 1 tbsp. salt 1 cup sour cream 1 1/2 tbsp. white vinegar 1/4 cup salad oil 1/2 tsp. sugar 3 tbsp. chopped fresh or dried dill A pinch of pepper Directions: Scrub cucumbers and leave unpeeled. Cut off the ends. Score with fork tines. Slice paper thin, very important. Sprinkle with salt. Let stand at room temperature for one hour. Drain and rinse to remove salt. Squeeze dry. Combine sour cream, vinegar, salad oil, sugar and dill. Pour over cucumbers. Add salt and pepper to taste. Chill before serving and this fine dish serves eight. A nice summer meal.

Herring Salad Ingredients: 1 large jar of herring in wine 1/2 cup sour cream 1 tbsp. lemon juice 1 tsp. sugar 1 tsp. horseradish 1 Granny Smith apple (de-cored and grated) 2 grated dill pickles 2 or 3 pimento strips Directions: Drain liquid and cut up in smaller pieces. In large glass bowl, mix together the sour cream, lemon juice, sugar, horseradish, apple, pickles and pimento strips, plus include the drained herring. Let stand in fridge for a while; even until the day before your special meal or occasion. This is another recipe from my late German uncle Hans Mueller.

Dancing Chickens Ingredients: Rub: 4 tsp. paprika 2 tsp. salt 2 tsp. onion powder 2 tsp. freshly grounded black pepper 1 tsp. garlic powder 1 tsp. sage 1/2 tsp. cayenne pepper Chicken: 1 3 1/2 to 4 lb. chicken 1 can of beer 1 disposable aluminum roasting pan Directions: Combine all ingredients for the rub. Store in covered container and use as needed. Wash chicken, pat dry; sprinkle rub over chicken to coat well. Open can of beer and stand up in foil pan. Place chicken body cavity over the can. Set in preheated barbecue over medium-low, direct heat; close cover and cook for 1 1/4 to 1 1/2 hours, makes approximately four servings. Tips: Drink half the can of beer, and then continue with recipe. Cook an extra chicken and serve it cold the next day for an easy supper/dinner. Finnish Cheesecake Ingredients: Crust: 1 cup flour 1 tbsp. sugar 1/4 cup butter or margarine 1 tsp. baking powder 1 beaten egg Filling: 1 cup cottage cheese 3 eggs 1/2 cup sugar 2 tsp. grated lemon peel 1 tbsp. lemon juice 1 tsp. vanilla extract 1/2 cup butter Directions: To prepare the crust: Mix the flour, sugar, baking powder and butter until crumbly. Add beaten egg and mix as for crust. Press dough evenly on the bottom of a 9 inch pie pan. To prepare the filling: In a blender, combine cottage cheese, eggs, sugar, vanilla, butter, lemon peel and lemon juice. Puree and pour into crust. Bake at 350 degrees F. for 45 minutes until set. A true Scandinavian delight.

The following is the first of such culinary delights, more to come in the days and weeks ahead, it's time to start the oven. Deluxe Apple Pie This recipe comes from my grandmother's cookbook of 1959, enjoy. Ingredients: 6 cups thinly sliced apples (preferably Mutsu) 6 tbsp. white sugar 6 tbsp. brown sugar 1/3 cup all-purpose flour 1 tsp. cinnamon 1/4 tsp. salt 1/4 cup butter 1/2 tsp. lemon rind 6 tbsp. whipping cream 1 pastry recipe Directions: Prepare pastry and line a 9 inch pie plate, reserving some for top crust. De-core and peel apples. Combine sugars, flour, cinnamon and salt together, and then mix with apples. Spread apple mixture into unbaked pastry shell. Dot with butter and sprinkle with lemon rind. Pour whipping cream over top, and then cover with top crust, sealing carefully; and making slits to allow steam to escape. Bake in a preheated oven at 450 degrees F. for 10 minutes. Reduc...
