Another holiday favourite to start this week.
Pumpkin Muffins
Ingredients:
1 1/2 cups all-purpose flour
1 tsp. each of baking powder and baking soda
1/2 tsp. each of salt, cinnamon, nutmeg and ginger
1/2 cup raisins
1 1/2 tbsp. grated orange rind (optional)
1 egg
1/4 cup white granulated sugar
1/3 cup canola oil (or preferred choice)
1 cup cooked pumpkin
Directions:
Combine all first eight dry imgredients in large bowl, and stir thoroughly. Make a well in the center.
Beat egg in small bowl until frothy. Then, mix in sugar, cooking oil and pumpkin. Pour into well.
Stir only to moisten. Batter will be lumpy. Fill greased muffin cups 1/4 full. Bake in pre-heated oven
at 400 degrees F. for 20 to 25 minutes. Let stand to cool for 5 minutes. Remove from pan and serve
muffins warm. Makes 14 servings as a moist, tender and delicious snack or dessert, enjoy.
