Just a quick weekend update.

To all my supporters, I currently don't have any mushroom recipes to offer, the closest that I can get to toadstools is cream of mushroom soup, other than that and frying them with steaks over the years, that's about it for me with those veggies. I even had a few growing on my lawn, but the early frost must've done away with them. Lastly for now, I usually don't blog on holidays and weekends, but in this case, I made an exception. I have many more food-related posts to come on this blog in 2024, and hopefully into 2025; please stay tuned and bye for now.

Zucchini Bread Firstly, just a friendly reminder to all of my readers and supporters of this blog, all of the dishes posted  here are also low in fat, still a very important factor in today's baking and cooking of the 21st century. Ingredients: 1 tbsp. lemon zest 1 cup whole spelt flour 1 cup all-purpose flour 2/3 cup white sugar 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/4 tsp. nutmeg 1 cup grated zucchini (tightly packed) 1/4 cup unsweetened applesauce 1 lightly beaten egg 1 egg white 1 tsp. vanilla extract 1/4 cup plain, non-fat, drained yogurt Directions: Bake in preheated oven at 350 degrees F. Coat a 9 by 5 inch loaf pan with non-stick cooking spray.  Gently spoon flour into measuring cups (do not pack). Add flour to a large bowl, followed by the  sugar, baking powder, baking soda, salt and nutmeg. Stir well with a wire whisk. Spicy Zucchini Muffins Ingredients: 2 small zucchini (approx. 1 3/4 cups, when shredded) (*the smaller zucchini the better for more great flavour*) (*Zucchini can be frozen after grating/shredding*) 1 1/8 cups packed dark brown sugar (demarara preferably) 2/3 cup melted butter (or margarine, if preferred) 2 tsp. vanilla extract 2 large eggs 1 1/2 cups all purpose flour (Robin Hood, etc.) 1/2 tsp. each of baking powder and baking soda 1 1/2 tsp. ground cinnamon 3/4 tsp. ground nutmeg 1/4 tsp. ground ginger 1/8 tsp. ground cloves 3/4 tsp. salt Directions: Grease muffin pans/tins with margarine, if preferred; plus, use paper muffin cups if preferred. Preheat  oven to 350 degrees F. Set aside pans/tins/cups and zucchini for later. Whip together in medium or  large bowl the margarine, brown sugar, vanilla and eggs. Two more anytime sweet treats, firstly.....

Chocolate Hermits A cookie of "old" using an additional special something; "strong coffee". Ingredients: 1/2 cup shortening 1 cup brown sugar 1 egg 1 1/2 cups + 1 tbsp. flour 1/4 cup cocoa 1/2 tsp. each of salt, nutmeg and cinnamon **1/4 cup cold strong coffee** Chocolate chips (use preferred amount) 1/4 to 1/2 cup chopped walnuts Directions: Combine first 3 ingredients listed above, sift dry ingredients and add to first mixture, alternately with  the coffee. Stir in 3/4 cup chocolate chips and the chopped walnuts. Bake at approx. 325 degrees F.  for 15 to 20 minutes, or until set; or firm to slight touch. Remove from oven and cool completely on  wire rack. Enjoy as a snack or dessert with your favourite beverage.
