Secondly today, another all-time family favourite, with some twists.

Carrot Cake

This classic recipe uses special ingredients as follows, enjoy.

Ingredients:

1 cup all-purpose flour

1/4 cup quick cooking (cooked) rolled oats

1 1/2 tsp. baking powder

1 tsp. each of baking soda and ground cinnamon

3/4 cup raisins (or chopped dates)

1 beaten egg

1 can Carnation Sweetened Condensed Skim Milk (use preferred amount)

1 1/2 cups grated carrot

1/2 cup crushed drained pineapple

2 tbsp. vegetable/cooking oil (canola preferred)

2 tsp. grated orange rind

Directions:

Preparation time; 10 minutes, baking time; 65 to 70 minutes. In large bowl, combine all dry ingredients 

and raisins. In medium bowl, combine remaining ingredients. Stir condensed milk mixture into flour 

mixture until just moistened. Pour into greased 9 by 5 inch loaf pan. Bake in preheated oven at 350 

degrees F. for 35 minutes. Cover loosely with aluminum foil, with the shiny side up to prevent over-

browning/burning, continue baking for another 30 to 35 minutes, or until the inserted toothpick in the 

centre comes out clean. Remove from pan and let cool on rack. Makes approximately 16 slices.

2002*. *You may also try making muffins from this recipe as well, but little changes must be made*.
